When dairy deregulation hit, farmers either sold up, struggled on, or modified their farms to cope.

Moorland's Lambert family took the third option and brought their environmental conservation ideas to the fore to establish an organic farm.

Norm Lambert, also known as the Violin Doctor, his wife Elvie and son Paul use no chemicals in their production of citrus, vegetables and vealer meat.

"This is all about organics and making food better for people and they can be sure this produce is good for their bodies," Norm said.

Doraville, a four generation farm, grows it's produce "as nature intended" according to Elvie, without the use of insecticides, pesticides or artificial fertilisers. Instead the Lamberts use worm castings as fertiliser on their pastures and mineral fertilisers on the citrus and vegetables.

Going organic is the future of farming, according to Norm, with the community increasingly aware of chemicals in food and generally around the home.

"Even kids are aware," Norm said.

"I gave a talk at a Taree school recently and the kids knew more about organic food than their parents."
